Pan Roasted Salmon Filets in Mango Juice served with Basmati Rice
Delicious filets of wild salmon marinated in mango juice, pan fried and finished in the oven, served with mango and cilantro salsa and fragrant basmati rice.

Koh Samui
Fried bell peppers, mushrooms, spring onions, soy bean sprouts, peas, pineapple and banana in Thai coconut curry sauce with lemon grass. Served with white or whole grain basmati rice.

Beef Rendang
This is a wonderfully fragrant, slow cooked meat dish with coconut milk, red chilies, lemon grass and tumeric. Originating in Malaysia, Indonesia and Sumatra, it is usually served there for feasts and celebrations. Garnished with fresh mint and segments of lime and served with fluffy rice.

Beef Bourguignon with Garlic Gratin Dauphinoise
This stew is a traditional French beef stew with braised carrots, pearl onions, mushrooms and bacon cooked in the oven with red wine. This dish can be served with garlic gratin dauphinoise - potatoes thinly sliced and cooked in the oven with cream and garlic for an elegant dinner entrée.

Goat’s Cheese, Broccoli and Black Olive Quiche with a Classic Marinated Tomato Salad*
A flaky crust is filled with goat’s cheese, broccoli and black olives, and topped with a creamy egg custard, then baked to perfection. Served alongside a chilled marinated tomato or a mixed green salad for the perfect elegant lunch or dinner.
*Quiche can be made with a variety of ingredients to the taste of the client.

Abruzze Lamb & Red Pepper Ragù with Penne
Ground lamb shaped into meatballs mixed with ricotta, breadcrumbs and garlic. Together with fresh tomato sauce and roasted red bell peppers, this makes a delicious dish and sauce all served over al-dente penne pasta.

Lasagna *
Filled with a ragout of mushrooms, carrots, celery and tomatoes, baked in béchamel parmesan sauce.
*Also available with ingredients suitable for vegan, vegetarian or wheat intolerant diets.

Ravioli filled with basil and ricotta cheese served with basil pesto sauce and fresh grated Parmesan cheese.

Turkey Phylo Pie
This pie is actually a lightened casserole of turkey breast pieces in a delicate cream sauce with a layer of crisp tender vegetables, all covered with phylo dough and baked in the oven.

Potato-Zucchini Gratin
Served in a nest of aragula and lettuce with a honey-nut dressing.

Wild Meadows
Fried oyster mushrooms on a base of arugula and red lettuce, chicory and cherry tomatoes, served with balsamic vinegar and olive oil.

Classic Greek Salad
Feta cheese, tomatoes, cucumber, olives, green peppers, onions and lettuce, served with balsamic vinegar and olive oil.

A la Mexicana Salad
Tomatoes, avocado, pineapple, sweet corn, lettuce, and celery, with a yogurt or fine herb dressing.

Aragula Salad
Aragula, tomatoes, radish and olives, served with balsamic vinegar and olive oil and fresh grated parmesan.

Warm Goat’s Cheese Salad
Warm goat’s cheese served on a bed of fresh greens with mango and black olives, together with a garlic balsamic and olive oil dressing.

Thai Beef Salad
Strips of cold, pan-fried, grass-fed beef filet together with cucumber, cilantro and red onion, served with a Thai lime dressing.

Thai Chicken, Galangal and Cilantro Soup
Organic chicken strips, coconut milk and fragrant Thai herbs and spices make this soup a light and delicious starter.

Chilled Cucumber, Melon and Mint Soup
A light soup perfect as a starter to a summer lunch or supper.

Moroccan Harira Soup
Hearty soup of lamb, chickpeas, lentils and tomatoes flavored with tumeric, cinnamon and saffron. In Morocco this dish is served as an important part of the festivities of Ramadam and is the traditional dish to break the fast.

Mango Tiramisu
A light mascarpone cream layered over home-made biscuits combined with Mango purée and lime juice.

Crème Brûlée
Flavored with either vanilla or Thai-mango.

Apple Strudel
Baked phylo dough with walnuts, raisins, a subtle note of cinnamon, brown sugar and brandy. Served with a warm vanilla sauce.

A light fruit tart with whole berries on a custard cream and orange-soaked baked pastry case.

Normandy Pear or Apple Tart
